Instructions:  

  1. Preheat the oven to 350°F. Grease a 9.5” loaf pan and set aside. 
  2. Place flour, 3 tablespoons of chopped herbs, baking soda, baking powder, salt, pepper and sugar in the bowl of a food processor and pulse to combine. Add cubed Kerrygold Unsalted Butter and pulse to form into large crumbs. 
  3. Transfer flour and butter mixture to a large bowl. Add the grated Kerrygold Reserve Cheddar and olives and stir to combine. 
  4. In a small bowl whisk together buttermilk and eggs. Pour over the flour and cheese mixture and stir to combine. Batter will be thick. Spoon the batter into the prepared loaf pan and smooth the top. Sprinkle the batter with remaining tablespoon of chopped herbs and grated cheese. 
  5. Bake in a preheated oven for 45-50 minutes or until a toothpick comes out clean when inserted into the center of bread. 
  6. Cool in pan for 10 minutes before removing and slicing. Serve warm or room temperature.
