1. Preheat the oven to 350°F and line an 8×8 pan with parchment paper.
  2. Combine Kerrygold Salted Butter Sticks and 8 ounces of chopped chocolate in a microwave safe bowl and heat at 50% power for 2 minutes or until melted. Stir to combine and let the mixture cool slightly. 
  3. Stir the sugar into the chocolate mixture. Add the eggs and whisk thoroughly. Pour in beer and stir to combine. 
  4. In a small bowl mix together the flour, cocoa and salt. 
  5. Add flour mixture to chocolate mixture and stir until thoroughly combined and mixture is glossy. 
  6. Pour brownie batter into the prepared pan. Scatter chocolate chunks on top and sprinkle with flaky sea salt. Bake for 28-30 minutes or until a toothpick inserted in the center comes out with a few fudgy crumbs sticking to it. 
  7. Cool completely and cut into 12 squares. Sprinkle with additional flaky sea salt, if desired.
