1. Preheat the oven to 400°F. Line a baking pan with parchment paper and set aside. 
  2. Place chopsticks on a cutting board and place one potato on top. 
  3. Using a sharp knife, slice the potatoes in 1/8 inch slices, making sure to not cut all the way through, Using the chopsticks prevents the knife from slicing all the way down, 
  4. Repeat with remaining potatoes and set on prepared pan 
  5. Melt the Kerrygold Salted butter and add one tablespoon of chopped parsley. 
  6. Drizzle the tops of the potatoes with olive oil and season with salt and pepper. 
  7. Brush the tops of the potatoes with the melted butter and parsley mixture. 
  8. Bake in a preheated oven for 60 minutes or until potatoes are cooked through, 
  9. Remove from oven and brush with the remaining butter and parsley mixture. 
  10. Garnish with fresh parsley and serve immediately.
