Instructions:  

  1. Preheat the oven to 375°F.  
  2. Place tomatoes, shallots, garlic, capers, white wine, basil and olive oil in a 9 x 13” baking dish. Stir to combine. Season with salt and pepper. Bake for 15 minutes and remove from the oven.  
  3. Pat fish dry and nestle into the tomatoes. Brush the tops of the fish fillets with the melted Kerrygold butter and season with additional salt and pepper. Bake for 12-15 minutes or until the fish is easily flaked with a fork. Serve immediately.
