1. Preheat the waffle iron. 
  2. Butter one side of each of the slices of bread. 
  3. Place two slices of bread, buttered side down on the waffle iron. Spread a layer of stone ground mustard on the bottom of the bread. 
  4. Layer two pieces of ham and a slice of Kerrygold Dubliner Cheese on each piece of bread. Repeat with remaining ham and cheese. Scatter arugula on top of cheese. Add second slice of bread and close waffle iron. 
  5. Cook until cheese is melted and bread is toasted, about 6 minutes.
