Instructions
- Boil the red potatoes until fork tender, cool in a colander until easy to handle and dice.
- Add mayonnaise, sour cream, olive oil, vinegar, salt and pepper to a small bowl and whisk to combine.
- Place the potatoes, green onions ,bacon and parsley in a large bowl. Add the dressing and toss to coat. Sprinkle with the Kerrygold Cashel Blue cheese.
- Refrigerate or serve immediately. If refrigerated, let it come to room temperature for 30 minutes before eating. Serve with the cooked sausages.
