Instructions:  

  1. Place the potatoes in a large pot. Fill the pot with water to 1 inch above the potatoes. Bring water to a boil and cook for about 20 minutes until the potatoes pierce easily with a fork. Remove from heat and drain the potatoes well. 
  2. Add the cooked and drained potatoes to a large bowl along with the Kerrygold butter, milk, and garlic. Mash with a potato masher or hand mixer until creamy, being careful not to overmix. 
  3. Stir in the grated Kerrygold Dubliner cheese, salt and pepper. Taste and adjust seasonings as desired. Serve immediately.
