For the vinaigrette:
- Place olive oil, balsamic vinegar and sugar in a small jar and shake to combine.
- Season to taste with salt and pepper and set aside.
For the salad:
- Add arugula and cucumber to a large bowl.
- Pour the desired amount of dressing on and toss to coat.
- Add watermelon chunks and blue cheese and toss gently to combine.
- Top with crushed pistachios and serve.
