For the vinaigrette: 

  1. Place olive oil, balsamic vinegar and sugar in a small jar and shake to combine. 
  2. Season to taste with salt and pepper and set aside. 

For the salad: 

  1. Add arugula and cucumber to a large bowl.  
  2. Pour the desired amount of dressing on and toss to coat. 
  3. Add watermelon chunks and blue cheese and toss gently to combine. 
  4. Top with crushed pistachios and serve.
