1. Preheat oven to 350 degrees F. 
  2. Heat olive oil in oven safe nonstick pan. 
  3. Once oil is shimmering, add mushrooms and cook for 2-3 minutes. 
  4. Add onions, potatoes and garlic and cook until vegetables are almost done (3-5 minutes.) 
  5. Add arugula and cook until wilted.  
  6. While vegetables are cooking, add eggs and cream to a large bowl and whisk until creamy. 
  7. Add salt and pepper and whisk to combine. 
  8. Stir in grated Kerrygold Aged Cheddar cheese. 
  9. When vegetables are done cooking, pour egg mixture over vegetables and cook until eggs are just set around the edges (3-5 Minutes) 
  10. Move pan to oven and bake for 15-18 minutes or until eggs are set. 
  11. Remove from oven and cool for 5 minutes. 
  12. Sprinkle with fresh arugula and serve.
