Instructions

  1. Place potatoes in a large pot of water and cook for 20-25 minutes or until a fork can pierce the potato but is still firm. 
  2. Drain the water and let sit until cool enough to handle. 
  3. Peel the potatoes and refrigerate for 6 hours or overnight. 
  4. Grate the potatoes and place in a large bowl. 
  5. Add the flour, grated Swiss cheese, scallions, salt and pepper and toss to coat. 
  6. Heat 1 ½ tablespoons ghee in a nonstick frying pan over medium high heat until shimmering. Add potato mixture and press it down with a spatula. 
  7. Cook for 7-10 minutes or until crispy and slide Rösti onto a plate. 
  8. Place another plate on top of Rösti and flip over.  
  9. Add remaining ghee to pan. 
  10. Slide Rösti back into pan and cook for additional 7-10 minutes or until crispy. 
  11. Remove from pan and cut into wedges. 
  12. Serve with sour cream and chives.
