1. Preheat the oven to 315 degrees F. Line a rimmed baking sheet with parchment paper, or foil sprayed with nonstick cooking spray.
  2. In a medium-size mixing bowl, combine the room temperature Kerrygold Naturally Softer Pure Irish butter, garlic, cilantro, parsley, basil, salt and pepper, and lemon zest. Use a fork to thoroughly combine all the ingredients. 
  3. Place the large piece of salmon on the prepared baking sheet. Spread the herb butter all over the top of the salmon. Use a small spatula or your damp fingers to work the mixture over the top.
  4. Bake for 30-35 minutes, spooning the melted Kerrygold butter over the salmon halfway through the baking time. The fish should flake softly. Serve with a leafy salad, and spoon remaining melted herb Kerrygold butter from the pan on top of the fish.
