- Preheat the oven to 315 degrees F. Line a rimmed baking sheet with parchment paper, or foil sprayed with nonstick cooking spray.
- In a medium-size mixing bowl, combine the room temperature Kerrygold Naturally Softer Pure Irish butter, garlic, cilantro, parsley, basil, salt and pepper, and lemon zest. Use a fork to thoroughly combine all the ingredients.
- Place the large piece of salmon on the prepared baking sheet. Spread the herb butter all over the top of the salmon. Use a small spatula or your damp fingers to work the mixture over the top.
- Bake for 30-35 minutes, spooning the melted Kerrygold butter over the salmon halfway through the baking time. The fish should flake softly. Serve with a leafy salad, and spoon remaining melted herb Kerrygold butter from the pan on top of the fish.
