Instructions:

  1. Preheat the oven to 400°F.
  2. Pat the chicken dry and place the chicken quarters in the base of a dutch oven.
  3. Brush the tops of the chicken quarters with melted Kerrygold butter.
  4. Mix spices together and rub into the chicken pieces.
  5. Toss the onions with 1 tablespoon of olive oil and place in the pan with the chicken. Brush the cut sides of the garlic heads with remaining tablespoon of olive oil and nestle heads into the pan. Bake for 60 minutes, or until chicken is cooked through and the garlic is soft.
  6. Remove from the oven and rest for 10 minutes before serving.
