1. Pre-heat the oven to 350 degrees F.

2. Cream together the Kerrygold Unsalted Butter, sugar and vanilla extract with a wooden spoon. Then stir in pistachios, white chocolate, cranberries and milk.

3. Sieve in the flour and baking powder and using your hands, mix together until mixture forms a dough. Halve the dough and shape each half into a log about 2 inches across. Wrap in plastic wrap, then chill for 1 hour.

4. Slice the logs into ¾-inch thick rounds, place on a baking tray lined with baking parchment and bake for 12-15 minutes. Once the cookies are a light golden color, remove and allow to cool completely on a wire rack.
