1. Preheat oven to 400 degrees and line a sheet pan with foil.
  2. Place carrots on sheet pan. In a small bowl, mix brown sugar and syrup together and pour over carrots, tossing to coat.
  3. Place carrots on pan so they are not touching and dot the top with the Kerrygold Irish Butter with Olive Oil.
  4. Season with salt and pepper.
  5. Cook for 40-50 minutes until browned, turning after 20 minutes.
  6. Remove from oven and garnish with chopped parsley and sea salt.
  7. Serve immediately.
