Instructions:

  1. Preheat the oven to 375°F.
  2. Line a baking sheet with parchment paper.
  3. Cream Kerrygold Unsalted Butter and sugar together in a large mixing bowl.
  4. Sift in the flour.
  5. Finely chop the flowers and add with the salt.
  6. Combine until a dough forms.
  7. Roll out the dough on a lightly floured surface and cut into about 30 rectangular biscuits (cookies).
  8. Prick with a fork and dust with sugar.
  9. Transfer to the baking sheet and refrigerate for 20 minutes.
  10. Bake in the preheated oven for 20 minutes or until pale golden brown.
  11. Cool on a wire rack.
