Instructions:  

  1. Place a sheet pan in the oven and preheat the oven to 425°F.  
  2. Place diced vegetables, chopped parsley, salt and pepper in a large bowl. Pour melted Kerrygold Garlic and Herb butter over the top of vegetables and toss to coat.  
  3. Add vegetables to the preheated pan and roast for 45-60 minutes or until vegetables are golden brown. 
  4. Sprinkle with additional parsley and serve.
