Preheat oven to 375 degrees F.

Stir together sausage, cream cheese, cilantro and 1 cup cheese until combined.

Stuff 1 tablespoon of sausage filling in each pepper half and place on baking sheet.

Sprinkle a few shreds of Kerrygold Aged Cheddar cheese on top of each pepper and bake for 25 minutes.

Serve immediately.
