Instructions:

  1. Heat the butter: Melt 1 tablespoon butter in a small cast iron or stainless-steel pan over medium heat. Once melted, tilt the pan to coat the entire surface.
  2. Add the eggs: Crack the eggs one at a time into the pan. Cook for 2 minutes until the whites begin to set.
  3. Baste: Tilt the pan and use a spoon to continuously baste the eggs with the butter, spooning it over the tops for 2–3 minutes until the whites are fully set and the yolk reaches your desired consistency.
  4. Season and serve: Season to taste with salt and pepper and sprinkle with chopped parsley. Serve immediately

Notes: For a runny yolk, baste for closer to 2 minutes. For a fully set yolk, go the full 3 minutes.
