Instructions:
- Heat the butter: Melt 1 tablespoon butter in a small cast iron or stainless-steel pan over medium heat. Once melted, tilt the pan to coat the entire surface.
- Add the eggs: Crack the eggs one at a time into the pan. Cook for 2 minutes until the whites begin to set.
- Baste: Tilt the pan and use a spoon to continuously baste the eggs with the butter, spooning it over the tops for 2–3 minutes until the whites are fully set and the yolk reaches your desired consistency.
- Season and serve: Season to taste with salt and pepper and sprinkle with chopped parsley. Serve immediately
Notes: For a runny yolk, baste for closer to 2 minutes. For a fully set yolk, go the full 3 minutes.
