Instructions:

  1. Place an oven rack in the center of the oven and preheat to 350ºF.
  2. Line an 8” x 8” baking pan with parchment paper so that it hangs over 2 sides of the pan. Lightly grease the pan and parchment with Kerrygold Unsalted Butter.
  3. In a double boiler or a heatproof bowl set over a pan of simmering water, melt the Kerrygold Unsalted Butter and chocolate, stirring frequently. Remove the pan from the heat and whisk in the sugars.
  4. In a small bowl, beat the eggs with the vanilla until light and fluffy. Vigorously whisk the egg mixture into the chocolate mixture for about a minute until smooth and glossy.
  5. Stir in the flour, salt, and baking powder.
  6. Pour the batter into the prepared baking pan. Sprinkle with the chocolate morsels.
  7. Bake for 25-30 min or until a cake tester inserted in the middle comes out with a few crumbs. Do not overbake! The edges of the brownies should look firm, and the center should be slightly moist.
  8. Remove to a rack to cool completely before slicing. Cut into 5 strips. Cut each strip crosswise into 5 mini brownies.
