Instructions:
- Place an oven rack in the center of the oven and preheat to 350ºF.
- Line an 8” x 8” baking pan with parchment paper so that it hangs over 2 sides of the pan. Lightly grease the pan and parchment with Kerrygold Unsalted Butter.
- In a double boiler or a heatproof bowl set over a pan of simmering water, melt the Kerrygold Unsalted Butter and chocolate, stirring frequently. Remove the pan from the heat and whisk in the sugars.
- In a small bowl, beat the eggs with the vanilla until light and fluffy. Vigorously whisk the egg mixture into the chocolate mixture for about a minute until smooth and glossy.
- Stir in the flour, salt, and baking powder.
- Pour the batter into the prepared baking pan. Sprinkle with the chocolate morsels.
- Bake for 25-30 min or until a cake tester inserted in the middle comes out with a few crumbs. Do not overbake! The edges of the brownies should look firm, and the center should be slightly moist.
- Remove to a rack to cool completely before slicing. Cut into 5 strips. Cut each strip crosswise into 5 mini brownies.
