Ellen King is a classically trained chef, Co-Owner and Head Baker at Hewn, and known all around town for her passion for baking, history and heritage grains. What started out of her home as making light, airy creations to share with neighbors through her “Underground Bread Club”, grew in 2013 into the renowned Hewn Bakery. Word has since spread outside Evanston, IL with Hewn being recognized in The New York Times, Saveur, Chicago Magazine, Forbes and other notable publications. It has also been named one of the Best Bakery in the Surburbs and its dishes named one of Chicago’s 100 Best.
