Instructions:
For the marinade:
- Place chicken in a shallow bowl or casserole dish. Add olive oil, lemon juice and Dijon mustard to a small jar and shake to combine. Season to taste with salt and pepper and pour over chicken.
- Marinate the chicken for 30 minutes.
For the chicken:
- Preheat grill to medium high.
- Remove chicken from marinade. Discard any remaining marinade.
- Brush each breast with melted Kerrygold Chive and Onion Butter Blend and place on grill. Grill for 5 -7 minutes and baste again with melted butter. Flip the chicken over and grill for additional 5-7 minutes or until internal temperature reaches 165°F.
- Remove chicken from grill and tent with foil for 5 minutes to allow the juices to redistribute.
- Place a teaspoon of Kerrygold Chive and Onion Butter Blend on each chicken breast, garnish with chopped chives and serve.
