Instructions:

For the marinade: 

  1. Place chicken in a shallow bowl or casserole dish. Add olive oil, lemon juice and Dijon mustard to a small jar and shake to combine. Season to taste with salt and pepper and pour over chicken.
  2. Marinate the chicken for 30 minutes. 

For the chicken: 

  1. Preheat grill to medium high.  
  2. Remove chicken from marinade. Discard any remaining marinade.  
  3. Brush each breast with melted Kerrygold Chive and Onion Butter Blend and place on grill. Grill for 5 -7 minutes and baste again with melted butter. Flip the chicken over and grill for additional 5-7 minutes or until internal temperature reaches 165°F. 
  4. Remove chicken from grill and tent with foil for 5 minutes to allow the juices to redistribute. 
  5. Place a teaspoon of Kerrygold Chive and Onion Butter Blend on each chicken breast, garnish with chopped chives and serve.
