Instructions
- Place potatoes in a large pot of water and cook for 20-25 minutes or until a fork can pierce the potato but is still firm.
- Drain the water and let sit until cool enough to handle.
- Peel the potatoes and refrigerate for 6 hours or overnight.
- Grate the potatoes and place in a large bowl.
- Add the flour, grated Swiss cheese, scallions, salt and pepper and toss to coat.
- Heat 1 ½ tablespoons ghee in a nonstick frying pan over medium high heat until shimmering. Add potato mixture and press it down with a spatula.
- Cook for 7-10 minutes or until crispy and slide Rösti onto a plate.
- Place another plate on top of Rösti and flip over.
- Add remaining ghee to pan.
- Slide Rösti back into pan and cook for additional 7-10 minutes or until crispy.
- Remove from pan and cut into wedges.
- Serve with sour cream and chives.
