Preheat oven to 400 degrees F.
Beat one egg with two tablespoons of milk and combine with the softened butter. Add a cup and a half of flour until just mixed, then cover and refrigerate for half an hour.
Roll out the dough an eighth of an inch thick. Cut into rectangles, and then transfer to a baking sheet lined with parchment paper.
Brush lightly with milk, top with chopped rosemary, a little sea salt – and some grated Kerrygold Dubliner® Cheese for a distinctive and robust finish.
Bake at 400 degrees F for 15 minutes until golden brown. Allow to cool before serving with a creamy Dubliner® Cheese spread
Gently mix together half a cup of grated Kerrygold Dubliner® Cheese with a splash each of olive oil and white wine.
Garnish with snipped chives and lemon zest.
