Ingredients Avocado Toast

4 slices of artisan bread

2 ripe avocados, halved and sliced

Blue Cheese Spread (recipe follows)

2 tomatoes, sliced

½ cup microgreens

Blue Cheese Spread

6 ounces cream cheese, softened

2 ounces softened Kerrygold®

Cashel Blue Farmhouse Cheese

Salt and pepper to taste

Instructions:

For Kerrygold Cashel Blue Cheese Spread:  

    1. Place the cream cheese and Kerrygold Cashel Blue Farmhouse Cheese in a small bowl and stir until combined and smooth.  
    2. Season to taste with salt and pepper and set aside. 

For Assembly:

  1. Toast the slices of bread to desired doneness.  
  2. Spread 2 ounces of blue cheese mixture on top of each slice of toast.  
  3. Lay ½ of a sliced avocado over the blue cheese mixture.  
  4. Top with tomato slices.  
  5. Garnish with microgreens and serve.
