Instructions:

To Grill the Peaches: 

  1. Preheat a grill or grill pan to medium. 
  2. Brush the flesh side of the cut peaches with olive oil.  
  3. Place flesh side down on the grill for 2- 3 minutes and remove from heat.  
  4. Slice into wedges and set aside. 

To Assemble the Salad:  

  1. Place the arugula, peach wedges and crumbled Kerrygold Cashel Blue Farmhouse Cheese in a large bowl.  
  2. Drizzle dressing over top and toss to coat. 
  3. Scatter pecans over top and serve. 

For Honey Lemon Vinaigrette Dressing:

  1. Place all ingredients in a small glass jar, cover and shake to combine.
