Preheat oven to 350F. Spray ramekins with cooking spray and set aside.

In a small skillet, cook diced apples with butter until apples are slightly soft, about 5 minutes. Add flour and cook for 30 seconds, stirring continuously. Add brown sugar and water and cook for additional 2 minutes, stirring until combined. Remove from heat and set aside.

Place eggs in a medium bowl and beat well. Add milk and half-and-half and beat to combine. Stir in vanilla and cinnamon.

Place a layer of bread cubes in each ramekin and top with 1 tablespoon of apple mixture. Add remaining bread cubes and fill to the top of the ramekin.

Pour 1/4 cup egg mixture over top of bread cubes and top with an additional tablespoon of apple mixture.

Bake in preheated oven for 20 minutes or until bread is toasted and brown. Serve immediately.
