Dubliner

 

Complex. Worldly. Somewhat sweet, somewhat nutty. All of these words just as easily describe our Dubliner cheese as they do the city of Dublin itself. So it isn't hard to see where we drew our inspiration.

Dubliner is a robust, aged cow's milk cheese with a bit of a hard texture similar to a Cheddar. In one bite you can taste the diversity of flavors - from nutty to sharp to sweet. What might seem ambiguous is actually a well-balanced mix of cheese cultures and naturally occurring amino acids. This diversity pays off in its ability to be served alongside a full-bodied Cabernet, a freshly pulled pint of Guinness, or simply melted between a few slices of crusty brown bread.

A Cheese of Historical Proportions

Back in the day - way before your father's day when he walked to school in the winter for eight miles uphill, barefoot, one way - cows were as good as currency in Ireland. To protect one of the richest herds and most prosperous pastures of the time, Blarney Castle was built. Now almost 600 years later, our Blarney Castle cheese is produced using the same verdant green rolling hills and sparkling pure streams that meander through these once fiercely protected lands.

It would be hypocritical of us to produce a cheese called Blarney Castle without living up to its heritage. So automatically it has to be 100% natural without a speck of artificial flavors or additives. Blarney Castle is a mild and creamy cow's milk cheese with rich and velvety undertones. It both feels and tastes similar to a young Dutch Gouda and makes a perfect complement to fresh fruit and a glass of crisp Sauvignon Blanc.

Cheddar

 

There's a reason our Aged Cheddar tastes like heaven. It's made by monks. Well, at least it was 13 centuries ago when they first started their divine new hobby. Today we use the same attention to detail and the same naturally abundant land to create our 21st century version of this holy grail.

Aged Cheddar is a pasteurized cow's milk cheese that is aged for one year and undergoes a stringent grading process as it matures. Only the best and tastiest cheese makes it through, resulting in a Cheddar that is rich and full-bodied with a rich and smooth finish. Slice it up with warm apple pie or make it the hero of a cheese tray. It's even available in a Reduced Fat version. Not that you need it, we're just saying.

And if you like your flavors really intense, look for Kerrygold Reserve Cheddar with the gold label. Its sharp, strong flavor comes from an extra year of aging. So while the flavors are concentrated, the finish is still rich and smooth.

Swiss

 

One of the reasons every Kerrygold cheese tastes so distinctive is because they are each made in a unique part of Ireland. Kerrygold Swiss is no exception.

In the grasslands below the Rock of Cashel in County Tipperary roam some of the happiest herds in Ireland. These undulating pastures were first discovered by the Munster kings and have been nearly sacred ground ever since.

What's sacred to us is that these fields provide the richest, creamiest milk for our 100% natural Swiss. We age our Swiss over 90 days to enhance the delicate nuances that give it its signature sweet, nutty taste.

While we (and everyone else) call it Red Leicester, there isn't any white or purple or polka dot Leicester - all Leicester is red. Why this is so is anyone's guess, but we do know our delicious version originates from the town of Newmarket in County Cork.

Red Leicester is a mellow flavored cow's milk cheese with a tangy aftertaste. It has a firm body but a flaky texture and substitutes nicely for a rich Cheddar. It melts beautifully, making it perfect for recipes and goes well with most food, wine and beer. Or all three at once.

Talk about a family tree. The Iverni were an ancient people of Ireland, settling on the island around 500 BC. The name is thought to have derived from Erin, the ancient Greek mythological name for Ireland, which is itself derived from the word Éire, the name for Ireland in our indigenous Celtic language.

That's good party trivia when you're huddled around the cheese platter addicted to this elegant, complex piquant-style cheese. It's hard enough to grate over a bed of baby greens or a piping hot soup and delicious enough to slice and eat on its own.

Kerrygold Duhallow is a new semi-soft farmhouse cheese from Ireland with a distinctive buttery flavor, rich golden color, and a pleasantly creamy aftertaste. Handmade by the renowned Irish cheesemaker, Mary Burns, Duhallow is an authentic farmhouse cheese produced on the premises of the Burns family farm with milk entirely from the farm's own herd.
